Category: Blanched almond DESCRIPTION: Obtained from the grinding and refining of the cultivated fruit of the Prunus dulcis tree, shelled and blanched. Varieties cultivated in California, Australia, or Spain. THICKNESS: Extra fine: • < 0.8 mm: minimum 75%. Fine: • > 0.2 mm: maximum 5%. • > 1.44 mm: maximum 20%. • > 0.8 mm: maximum 50%. Coarse: < 2.5 mm (minimum 75%).
